Ambrosia ( Fruit Salad)

I had to find a classic 70's dish and this is what I came up with. This fruit salad is so good as is, but next time I'll need to make it with Splenda or try it without the sugar.

Use fresh or canned
-cherries, grapes, pears, bananas, peaches, pineapple etc

Dressing
1/4 c pineapple juice (from canned pineapple)
1/4 c lemon juice
1 c whipped cream
2 eggs
1 c sugar

Beat eggs, add pineapple, lemon juice and sugar. Cook in double boiler stirring constantly until thickened. Cool. Whip cream and fold into mixture before serving. Reserve 1/4 c for topping.

Pasta Salad

Ok this isn't your regular pasta salad, this is frickin amazing.

Dressing
1/4 c grated parm
1/2 c fresh parsley or some dried
1/2 c mayo
1/4 c white wine vinegar ( I used apple cider)
3 cloves garlic minced (or garlic powder)
pinch cayenne

Mix with 1/2 lb pasta
2c baby spinach
2 red peppers chopped
1/2 lb chopped cheese
1/2 onion chopped
cherry tomates cut in 1/2 or some chopped firm plum tomatoes.

This makes a great party dish, even the children love it.

Mexican Ceviche with Texturized Soya

Ok if you have stumble upon this recipe you have no choice. You have to make it. If you've ever had fish ceviche you would eat it the same way, on top of big nachos with hot sauce and mayo.
This recipe if from my Mexican neighbor Julia (hoo-lia).

Boil soya for 30 min. Let cool. Sprinkle lime and salt. Stir. Leave for 10-15 min. Stir in chopped tomato, onion, avacado, cucumber. Add clamato juice and chicken bouillon to taste.

Texturized Soya gets huge when it's cooked so dont use too much. I think I normally use 1-2 cups.

Spinach Dip

1 package cream cheese
1/2 package chopped frozen spinach
1/2 c grated parmesan cheese
1 garlic clove minced
1/2 tsp dried basil
1/2 tsp garlic salt
1/4 c grated mozza cheese

Preheat oven to 350.
Soften cream cheese. Cream together w everything except mozza cheese. Pour into greased serving dish or into Little Dipper. Top with mozza cheese. Bake 25 min or until top is browned. In Little Dipper just until heated through.

Serve with toasted bread or nachos!
